What is white chocolate?

Many people think white chocolate isn't really chocolate, but the FDA now says it can be called chocolate if it is made from real cocoa butter.  Cocoa butter is one of the most stable fats known that contains natural antioxidants which actually prevent rancidity.
Cocoa butter is the cream-colored natural fat of the cacao bean, extracted during the process of making chocolate and cocoa powder.  It  gives chocolate its creamy, smooth, melt-in-your-mouth texture. Milk and sugar are added to cocoa butter to make white chocolate. Try our white chocolate truffles.
